Cocktail Club
As may be expected this post is slightly delayed. Which in many ways is a nice way of saying the cocktails were very successful.
Baz & Dais took the controls for this one - thank you both for hosting a very enjoyable Friday night via Zoom.
Status Update - we’ve now migrated from Teams to Zoom. My conclusion from this move is that they’re all very similar and the problems remain the same.
But back to Friday night. We started with Dais walking us through making a Clover Club (sweet option) & then Baz took over with a Side Car (not sweet option). Both were fantastic, easy and I’m sure crowd pleasers!
Introduction
Friday night has now become Cocktail Night - this is a fantastic development. Our first session was especially wonderful as we were joined by Dais sister in Wiltshire with Sam & Kat also jumped onboard from Swindon.
As the images below show - these are lovely little cocktails to enjoy regardless of any global pandemic that might be passing through.
Ingredients & Method
CLOVER CLUB
40ml gin
10ml dry vermouth*
25ml lemon juice (fresh)
1 punnet of raspberries
1 x egg white
Ice
Utensils - Cocktail shaker, sieve & small pan
Method - Before you start get your cocktail glasses in the fridge or freezer so they’re cold. First up, make the raspberry syrup. Put 100ml water, 100g sugar and 1 x punnet raspberries In a saucepan on the stove, heat on gently and let it bubble away. Once the raspberries have broken down and the syrup is really pink and squishy, put it through a sieve. You can make as much as you want just dial up the content and keep in fridge.
Get your spirits, lemon juice (about 1 whole lemon per person), egg white & ice ready. Throw all these into a shaker (you can use protein shaker bottle or water bottle if u don’t have). The ice should go in first. Give this a good shake with the lid on tightly, this needs to be done for at least 90 seconds.
Next up, strain the liquid and take out the ice from the shaker. Pour it back in without ice and dry shake (no ice). Strain into a glass (removed from the fridge or freezer) and garnish with a raspberry.
This is about two cocktails.
*If you don’t have vermouth just do 50ml gin.

Ice
Handful of Mint
Lime x 2
Gin (4 shots)
Utensils - Shaker, sieve
Method - put a good amount of ice into your shaker, add in your torn up mint, juice two limes and add that in too and finally your gin. Give this a mighty shake up with the shaker lid on tightly. Careful pour the contents into your glass via a sieve. This works perfectly as it is for a strong hit or can be toned down with a chug of tonic water. Enough for two people. Enjoy.

We made our cocktails with a side of pizza and I can strongly recommend this choice. Pete & Dais went this burgers which I also believe were a success.

Morning After
Depending on how successful you are you can either go with a fry up (guilty) or use up the raspberries on the sourdough you made with Dad (Sam & Kat).
